Lemon Shortbread Bars

I’ve been on such a baking kick lately! Hey, the only way you get better is by getting more practice! This time, I tried the Lemon Shortbread Bar Mix from Trader Joe’s. Lemon bars have a sense of nostalgia for me and my time at New England Music Camp. Man, the lemon squares they would have at dinner sometimes were bomb. I saw this box of mix in the store and just had to try it! The recipe is super easy to follow and requires minimal ingredients.

Inside the box was a mix for the crust and a mix for the filling.

First Steps

I started out by combining the crust mix packet and the required ingredients and using the mixer to beat it until it was crumbly.

After the crust was mixed well, I put it in the bottom of the baking pan and pressed it into the bottom and slightly up on the sides.

While the crust is baking…

The crust went in the oven first for a few minutes, so in the meantime I prepared to filling.

After the crust was golden brown on the edges…

I added the filling mixture to the crust pan and put it back in the oven to finish baking.

Voila!

It came out great!

A final note about the lemon bars: they are SUPER sweet. If you don’t like extremely sweet foods, then this is not the dessert for you. Otherwise, enjoy!
